Day by Day

Everyone is always mentioning how its 6 months, 6 months, 6 months. That is all I ever hear, well I see it as a day by day thing. A day by day thing that I love so much and I am so glad that I get this experience. I have already learned so much and getting more confidence than I had.

This is a day by day thing I am going through, you never know what could happen, and I am always excited to see what is going to happen next. This past week has been scary to me, but its been way worth it. I realized I can handle a lot more than I thought I could, and I am glad I am doing this.

Ill try to write some more this weekend!!

2 Weeks Down...

So I went from being a student three weeks ago to now being an intern, its a crazy change. But I have been waiting for this, and I was ready to throw myself into all of it. These first two weeks were crazy, but I am just excited for what the rest of time has in store for me.
Everyone keeps talking about the next 6 months, but I realized I just need to look at it day by day, if the first 6 months went by fast I know for sure these next 6 months will also.
I need to take all of this in, and learn and gain as much experience as I can.

I am just excited for this part of my life, its another chapter down, and another one starting right away.

Its all part of my journey of Becoming America's Next Top Pastry Chef...

I GRADUATED!

Friday the 18th of June I Graduated The French Pastry School!!

It was one of the most exciting things that have happened in my life!

I never knew this day would happen but it did!!

One Week

Oh yes that is what I have left.
I have one week.
This is too crazy for me.
I have too many mixed feelings right now.
I am so happy, but so sad at the same time.
Ready for the next chapter, but not at the same time.

Exams

This is my 4th and final exam while I have been in school.
Have I ever thought they were hard?? Nope, I just know you can't worry about it or over think it all. This ones seems like we have a lot more than usual to do, but at the same time I feel like its not bad at all. I got everything I wanted to get done today done, so that is always a nice feeling. And I got some extra stuff done!! Woot Woot Go me!!

This is my final week of school really, its crazy to think that five months has gone by just like that. Its like you shouldn't of even blinked because it went so fast. Next week is preparation for graduation, then we graduate. I can't believe Im almost there, this is all I wanted and now its almost over! But Im not leaving the school anytime soon...haha no way...interning there for 6 months! Im excited for it, but know that this part is ending and it makes me sad. I don't want it to be over.

Then Came the Breakfast Pastries

Oh the joy of breakfast pastries, just how yummy they really are. These were all so good to make, once you learn how to make them all you realize it is not as bad as you think.

This was a great unit!!

Breads Breads Breads

It has been an exciting few weeks, it has been full of bread. This was one unit I was unsure of I have never made bread before and wasn't sure if I was going to like it. Being in the bread industry is a pretty rough thing to do, it is really early mornings and just crazy hours and shifts. But I think it is something I may tryout in the near future, who knows...I don't know but I may give it a chance.





That is just some of the bread we made, that is not even including breakfast pastries. We made so many things and took so much home, my freezer was packed, and it is still packed with so much. My brother and dad did not eat as much as I thought they would, but they will be taking a lot of stuff home with them...well they better.

Sorry Im not too exciting but Ive been pretty busy and tired.
